Nutella Sandwich Cookies




















I used the recipe from another blog http://chocolateandzucchini.com/ as I was too lazy to make Ganache and I did not have any cream in my fridge. Nutella is not a bad alternative!

Ingredients:

1 egg yolk- 50 mL (3 tablespoons plus 1 teaspoon)
cold water- 5g (1 teaspoon)
salt- 30g (2 tablespoons)
sugar- 250g (2 cups)
all-purpose flour- 125g butter, diced

Method:
In a medium mixing-bowl, whisk together the egg yolk, water, salt, and sugar.
Set aside. Using just my good old whisk, combine the flour and butter until the mixture resembles coarse meal.

Pour in the liquid ingredients all at once, and process just until the mixture comes together.
Turn out onto a lightly floured work surface.
Divide in two and shape each half into a flattened ball, without kneading.
Wrap in plastic and chill for at least 30 minutes before using. (If you only use one of the balls, the other one can be frozen for up to a month.)

Preheat the oven to 180° C (350° F),
and line a cookie sheet with parchment paper.
Roll out the dough on a lightly floured surface. Using a small cookie cutter, cut out identical shapes and arrange them on the prepared baking sheet.
Brush with the egg yolk mixture and sprinkle with sugar if desired.
Slip into the oven for 12 to 15 minutes,
until golden.
Transfer onto a rack to cool completely.

Transfer nutella into a piping bag, piped it onto the flat side of one cookie then stick it onto another! I like that it's not too sweet!

Thanks! I used the other half of the dough to make strawberry jam cookies. Instead of Nutella, used strawberry jam instead. No need to sandwich them!
