I made these Cranberries Orange Cupcake simply because I have these cranberries sitting in the fridge for the longest time! Being so scattebrain, I actually forgot about them and left it in the oven sitting for a good 15 minutes after cooking time. Even though they are nice to look at ... it's as hard as rock!

This recipe is from Nigella Lawson - How to be a domestic goddess. She called it Christmas Morning Muffins. I'm not crazy about her recipe book, the ingredients she used are quite alien to me. For example - what is demerara sugar?? White or brown sugar?
