Rainbow Kuih
Looking at this Kuih, I used to think it must involved lotsa hard work to make this. Truth is .... it's so easy that I think any 8 year old can whipped this up. The only help they need is steaming the Kueh
250g Tapioca Starch
90g Rice Flour
400ml (Coconut milk)
200g Sugar
200ml Warm water
1/2 tsp Pandan Essence/paste
Red, Purple Colouring any colouring you have
Method
1. Mix all ingredients together and divide batter into equal portions according to the number of colours you have.
2. Add pandan essence to one portion and all the colours to other portions.
3. Pour 1 layer of batter into mould ( I used a loaf pan) and steam on high heat for 3 - 4 minutes. Alternate the different colours till you finish all the batter.
4. Steam the last layer for at least 5 minutes.
5. When the cake is cool, use a piece of thread to cut the cake . It tend to stick when using a knife to cut. Wrapped with glad wrap or a covered container if not eaten immediately. Re-steam for a few minutes if harden (if kept in the fridge)
