Oreo Cheese Cake


Baby number 3 arrived 3 weeks ago .... have I been baking?? BUT OF COURSE! During the last few weeks of my pregnancy I was still cooking and baking up a storm in the kitchen, but was too lazy to post anything. I made these Oreo Cheese Cake for the boy next door. He comes over to play with my kids during his free time and told me he likes all kind of cheese cake. So cheese cake it is!
Recipe is from Lust-For the Love of Chocolate by Audrey Tan
Ingredients
Oreo biscuits - 450g, cream scraped off, then crushed
Butter - 50g, soften
Honey - 50g
Sour Cream - 100g
Sugar - 100g
Cream Cheese - 600g
Large eggs - 4, beaten
Lemon - half for zest

Method
Line base of a 20cm round cake tin. Grease and flour sides of tin.
Preheat oven to 150 degree C
In a mixing bowl, mix 300g crushed biscuits, butter and honey until they resembles breadcrumbs. Press biscuit into the bottom of prepared tin.
In another mixing bowl, blend sour cream, cream cheese, sugar and lemon zest until smooth.
Gradually add eggs until well mixed.
Fold in 80 gm crushed biscuits, then pour mixture over biscuit base.
Bake for 30 minutes until cake is set. Leave to cool in tin.
Sprinkle remaining crushed biscuits on top.
