More Roti
The recent demise of Roti Boy has left a void in E’s life. I remembered that whenever we passed by a Roti Boy store, he can never resist the temptation. You can now buy it at almost all the bread store in town and in the neighborhood, except that it’s usually not piping hot.
The only option then is to bake my own. For my 1st attempt, it actually turns out quite well.
Dough Ingredients:
125g Soft butter
60g Sugar
1 Egg
½ tsp Salt
15g Instant Yeast
20g Milk Powder or 2 tsp condensed milk
350g Bread Flour
150g Plain Flour
200g Water
Method:
Topping Ingredients:
100g Soft butter
70g Sugar
2 Eggs
100g Plain Flour
1tbsp Instant coffee powder
1tbsp Coffee (mocha) essence
Method:
Note: E prefers the one with the butter filling. Peanut butter and nutella turned up dry.

Method:
- Mix all ingredients (except flour) together in an electric mixer using medium speed for 2 – 5 mins
- Change to the dough hook and slowly add in the flour and beat into a smooth and elastic dough (maxi speed for 10 mins)
- Let the dough rest to double in size
- Cut dough into 50 grams each and rest for 5 mins
- Wrap the filling (I used butter, peanut butter & nutella) with the dough and let it rest for another hour in the baking tin or sheet.
Topping Ingredients:
100g Soft butter
70g Sugar
2 Eggs
100g Plain Flour
1tbsp Instant coffee powder
1tbsp Coffee (mocha) essence
Method:
- Whisk together soft butter, sugar and eggs by hand (or mixer) until well mixed.
- Add in plain flour and stir well.
- Pour mixture into piping bag.
- Pipe in circular motion on top of the bun and bake at 200(C until golden (dark) brown.
